This weekend, I was the campeón del burrito. It takes a lot to be the burrito champ, but I earned the title this weekend. I enjoyed a day off from work Friday, but I spent it working on the house. Kevin and I took a much needed break from housework on Saturday. We spent the afternoon at the lake, and then partied it up the rest of the night.

I joined about 15 other people to celebrate a friend’s birthday at a pretty awesome Mexican restaurant. Even though it was a big group, everyone really enjoyed their food and received decent service. I ordered the steak burrito. Mmmm… beef.

It was huge! I didn’t eat my beans and rice as a side, and I pulled most of my rice out of my burrito. I was still totally stuffed! Oh, and if you were wondering, that’s a Dos Equis Amber on the side. Perfect pairing – as usual.

I took my remnants to-go, which turned out to be an excellent decision. I’ll spare you party details, but trust me, come 3:30 a.m., I was really happy to have those leftovers! I shared, so Kevin was happy to have them too (best wife ever).

The next morning, about 10 of us all met up for brunch. Wow. Worst brunch ever. The food was cold. The menus were misleading, and service was terrible. Even the hashbrowns were pitiful.

I ordered an egg, onion, pepper, and black bean burrito, or so the menu said. There was actually turkey sausage in it too, which upset one of the vegetarians in our party. I ate it anyway even though I’m not a fan of breakfast sausage.

I made up for the cruddy brunch when I made my dinner. It was soooooo good! As you can see, it was a spinach wrap filled with homemade yummus (aka: hummus), a few kalamata olives, and grilled veggies.

The grilled veggies included a portabello mushroom cap, eggplant slice, and some zucchini. I then pressed it all together. Delish! Of course, I also enjoyed a post-dinner treat (2 servings of Vanilla Almond Special K and unsweetened almond milk).

WIAW… Again

It’s time for another bloggie meetup party.  Woohoo!  I wish I could meetup with more of you in person, but until then, enjoy the pics!

Let’s start with something completely different.  Leia’s cuddling with Kevin, and for whatever reason, I found it picture-worthy.

leiaThey snuggled while Kev and I watched Supersize Me.  Wow.  What did you think of that bombshell of a movie?  I was angered that it was so hard on fast food (McDonald’s really) when other restaurants have plenty of meals that are as bad or worse.  However, the general message was good.  We eat out too often, and when we do, we eat too much.  The school lunch portion was the part I found most interesting.  Thanks, Mom for packing my lunch!

Now it’s time for the good stuff.  I switched up breakfast a teeny bit.  I switched to a two-part breakfast this week, but I’m not loving it.  It is half a banana or a rice cake with 1 or 1/2 TBS natural peanut butter.  I think I prefer my three-part breakfast since I’m starving by 8:30, but this is working for now.  Real breakfast is Love Grown Foods granola, 1 cup of strawberries or blueberries, and 60-calories worth of plain, fat-free Greek yogurt.

Lunch for the week is not pretty, but it’s good.  I have two hard boiled eggs with a veggie wrap.

The wrap is filled with broccoli slaw, a little baby spinach, a couple bell pepper slices, and about 1 TBS of TJ’s Goddess Dressing.  That stuff is the best dressing ever, or at least it’s my current crave.  The wraps are also super tasty – verrrry healthy too!

Snack is a mix.  It’s a granola bar and a little nectarine.  I’m loving the fruit, but only partially satisfied with the granola bars.  I’ve had to eat some Nature Valley bars because I ran out of these awesome Nature’s Path bars.  They’re like Rice Krispie treats for grownups!  (Not that adults cannot eat Rice Krispie treats…)

Dinner tonight will be a chicken breast, mini sweet potato, and green beans (or other veggie).  Dinner last night was half a chicken breast, a little potato, and not enough broccoli.

Yup, I was quite hungry, and dinner just wasn’t enough.  I totally thought I had more broccoli on-hand.  Sooooo, I pressed a roll, and ate it with marinara sauce.  Kev had two rolls with butter.  Mmmmm – butter.

I followed that with chips and a spoon of peeb.  It’s okay if the chips are “reduced guilt,” right???  My eats weren’t too exciting today (sorry), but at least my scallops were pretty yesterday.  If you want more great meal ideas, check out the WIAW blog party at Peas & Crayons.

What I Ate Wednesday (WIAW)

Yesterday’s workout was bad.  There.  I said it.  It’s over.  After a short run and an ab workout, I called it quits.  Today will certainly be better.  I’ll show that elliptical who’s boss!

You know what time it is – time for another What I Ate Wednesday (WIAW).  Woohoo!  Check out the blog hop Jennifer set up at Peas and Crayons to see the other good Wednesday eats.

The day began with a pre-gym rice cake, and then I followed up with a post-workout hardboiled egg.  Yum!  Two hours later, I had the last part of my three-part breakfast- oats, berries, flax and almonds.

I usually have fruit with 1/2 cup of oats, but after a stranger in the break room told me I was eating enough for two last week (yeah… total jerk… hope I never meet him), I backed it down to 1/3 cup this week.  I added in a 50-calorie mix of raw almonds and ground flax to make up the difference.

For lunch all week, I have had a mini TJs whole wheat wrap with about 1/2 a large chicken breast, some spinach, and a little bit of red pepper.  I also had a side salad with grape tomatoes and goddess dressing.  Yum!  That’s a pretty low-calorie lunch, and because it left me starving at by dinner time on Monday, I supplemented with an apple the rest of the week.

Snack is a delicious portion of Daisy 2% Cottage Cheese and 7 baby carrots.  I hadn’t had Daisy brand before, but I’m now a fan- not a Facebook fan, just a fan.

I planned to have a great cob salad Tuesday and Wednesday night in order to celebrate the start of summer.  As many of you pointed out yesterday, summer produce is worth a bit of excitement.

Practice Safe Salad - Cucumber Knows What's Up

The salad consists of lettuce, red bell pepper, cucumber, red onion, steamed corn, 2 slices of preservative-free turkey bacon, and a pack of Wholly Guacamole.  Holy Moly, Wholly Guac is good!  I look forward to eating it again tonight.

I’ll probably also have a bit of popcorn and almonds for dessert.  What’s a day without a treat?  Also, for those who were wondering, I think my good skin diet has helped give my skin a little more of a glow, but I’m still breaking out like crazy.  Oh well – I’ll keep it up a bit longer and see how it goes.

What’s the best thing you’ve eaten this week?  My fro-yo lunch Sunday might take the cake so far.

What do you do or say when a stranger comments on your eating habits? I smiled, but was fuming inside!  haha
