Mini Me n’ Mini Post

Hellooooo! I wish I could share loads of fun pics from the weekend, but I actually didn’t take many. I wish I could tell you all about my healthy weekend, but I failed in that arena as well. Lastly, I wish I was still home, but it’s back to the daily grind. Oh well – at least I had fun!

So what do I have for you? Tidbits from yesterday and a promise for a more enlightening post in the (hopefully-near) future. I also have a blog recap. In case you missed it…

Yesterday, I hit the gym in the morning before Kev and I got started on our housework. I followed my September workout and did leg curls and leg extensions as a superset. I also completed 40 minutes of moderate cardio. Austin Powers (the one with Mini Me) was on television, so that made cardio a bit more enjoyable.

I tried to “healthify” my evening by making a grilled veggie wrap, which consisted of eggplant, zucchini, homemade hummus, kalamata olives, and a Flatout wrap. This was the third eggplant wrap I made this weekend. I think I should lay off for a while!

Sadly, I left it on the grill a little too long. It’s an ugly pic, but I’m not so sure eggplant wraps could ever look attractive.

Leia, on the other hand, is always pretty!

She and I relaxed on the couch before I took a break for yet another treat (ice cream n’ granola). Yeah… ending the indulgent weekend on a healthy note didn’t work out so well for me.

Picture A Fun Weekend

Kevin and I packed our bags and headed west this weekend. Well, not too west, just out to the Midwest to see my parents. We had a fun weekend of good food, good beers, and great company.

I spent a bit of quality time with the fam (and their two adorable kittens) Friday night. We started the evening with pale ales and India pale ales from Boulevard Brewing Company. Both were great! I thoroughly recommend them.

Later that evening, Kevin got an IPA from 75th Street Brewing that tasted of hops and grapefruit. I had a Tallgrass Brewing Company brown ale. Both were quit tasty and went well with the fig, prosciutto, and caramelized onion pizza.

We shopped alllllll day Saturday. By the way, has anyone seen this sweet product – love it!

After a yummy BBQ dinner, we all had my mom’s awesome blackberry cobbler for dessert. It was my version of birthday cake.

Due to all these indulgences, I tried to make Sunday a little healthier. I cooked salmon for the first time, and it actually turned out pretty well. I served it atop a bed of black beans, spices, and veggies. Delish!

Kevin made the mistake of letting Leia try a mini bite of his salmon, and she quickly jumped in his lap with hopes for more. Can you see her tongue reaching for it??? What a goof!

WIAW… Again

It’s time for another bloggie meetup party.  Woohoo!  I wish I could meetup with more of you in person, but until then, enjoy the pics!

Let’s start with something completely different.  Leia’s cuddling with Kevin, and for whatever reason, I found it picture-worthy.

leiaThey snuggled while Kev and I watched Supersize Me.  Wow.  What did you think of that bombshell of a movie?  I was angered that it was so hard on fast food (McDonald’s really) when other restaurants have plenty of meals that are as bad or worse.  However, the general message was good.  We eat out too often, and when we do, we eat too much.  The school lunch portion was the part I found most interesting.  Thanks, Mom for packing my lunch!

Now it’s time for the good stuff.  I switched up breakfast a teeny bit.  I switched to a two-part breakfast this week, but I’m not loving it.  It is half a banana or a rice cake with 1 or 1/2 TBS natural peanut butter.  I think I prefer my three-part breakfast since I’m starving by 8:30, but this is working for now.  Real breakfast is Love Grown Foods granola, 1 cup of strawberries or blueberries, and 60-calories worth of plain, fat-free Greek yogurt.

Lunch for the week is not pretty, but it’s good.  I have two hard boiled eggs with a veggie wrap.

The wrap is filled with broccoli slaw, a little baby spinach, a couple bell pepper slices, and about 1 TBS of TJ’s Goddess Dressing.  That stuff is the best dressing ever, or at least it’s my current crave.  The wraps are also super tasty – verrrry healthy too!

Snack is a mix.  It’s a granola bar and a little nectarine.  I’m loving the fruit, but only partially satisfied with the granola bars.  I’ve had to eat some Nature Valley bars because I ran out of these awesome Nature’s Path bars.  They’re like Rice Krispie treats for grownups!  (Not that adults cannot eat Rice Krispie treats…)

Dinner tonight will be a chicken breast, mini sweet potato, and green beans (or other veggie).  Dinner last night was half a chicken breast, a little potato, and not enough broccoli.

Yup, I was quite hungry, and dinner just wasn’t enough.  I totally thought I had more broccoli on-hand.  Sooooo, I pressed a roll, and ate it with marinara sauce.  Kev had two rolls with butter.  Mmmmm – butter.

I followed that with chips and a spoon of peeb.  It’s okay if the chips are “reduced guilt,” right???  My eats weren’t too exciting today (sorry), but at least my scallops were pretty yesterday.  If you want more great meal ideas, check out the WIAW blog party at Peas & Crayons.

Good Things for Thursday (and a giveaway!)

I know it’s usually “Three-mile Thursday” around here (and yes, I still went for a run this morning), but today it’s “Good Things Thursday!”  Who doesn’t like good things?!?!

1 – Yesterday, I treated myself to a non-office coffee.  I’ve stated my distaste for the hot mud work coffee, so this is a treat.

Today I got more non-office coffee since I worked out at home instead of the gym, thus giving my access to both my shower and my coffee maker.  Simple pleasures…

2 – I came home to a whole lot of awesome yesterday.  Leia was pretty pumped about the greatness.  Food Should Taste Good was kind enough to send me 5 bags of goodies to review.  Wowzers – that’s a lot of chips!

Can I Has A Chip? Nom Nom Nom

Food Should Taste Good allowed me to choose which of the flavors I wanted to review, and trust me, it was no easy choice.  Their flavor lineup includes Multigrain, Sweet Potato, Olive, Jalapeño, The Works!, Chocolate, Lime, Blue Corn, Cheddar, Toasted Sesame, and White Cheddar.

After work, I savagely tore into opened, White Cheddar and Jalapeno.  The White Cheddar flavor was very tasty.  The chips are very crunchy, like regular corn chips, but there’s an added grainy texture, which I happen to like.  No greasy chip fingers here; they are like cracker/chip hybrids.  White Cheddar is not loaded with flavor, like Doritos or Cheetos, but your mouth and fingers do not turn florescent orange.  Score!  There’s just enough cheddar flavor to be satisfying.

Naked Chip - No Dip Needed

I think I prefer the jalapeno chips.  They are still very crunchy and grainy, but the extra kick is really nice.  It’s the tip-of-your-tongue hot, not wasabi all-up-in-your-buggers hot.  Neither chip will satisfy a salty craving, just FYI.

Lucky for me, I happened to have an amazing pairing on-hand at home.  Now, I’m not saying you need beer, a dip, or anything else in order to enjoy these chips.  However, I recommend having water handy if you have a low tolerance for spicy.  They’re not that hot, but there’s my warning.

Pairing a chip with a beer might sound… different, but let’s face it, pairing this flavor with a great craft brew like Victory Hop Devil (which scored 99/100 on Rate Beer and A+ by “The Bros” at Beer Advocate) is definitely a good thing!  Neither bitter beer nor spicy chip overpowered the other, and while the malt balanced the spice, the light hint grapefruit makes the pairing like a cabana party in my mouth.

  • Note, I only had a few drinks of Kev’s beer – one of those babies clocks in at 215 calories per 12 oz.  Yikes!
