What I Ate Wednesday

Remember those goals I mentioned yesterday in the Goooaaaaals post?  (Can you tell I’m a soccer fan?)  As you can see from my eats, I’ve been fairly good about following the goals.  Woohoo!  I also had a great workout yesterday.  I’m excited to share it with you later in the week.
First breakfast has been a rice cake (which hasn’t included peeb yet but probably will soon).  My post-gym breakfast has been a pear, 15 g walnuts, and 1/3 cup of oats.  Oh, and I also add a dash of cinnamon or pumpkin pie spice.

Before lunch, I got the munchies, so I had some tea and sugar snap peas.

For lunch this week, I made a tahini cream.  It was supposed to be a sauce, but it thickened overnight.  Whoops!  The flavor still rocks.  It has tahini, apple juice, and apple cider vinegar.  I throw that with some raisins and chickpeas over broccoli slaw and shredded cabbage.

Snack is incredible.  I love apples.  I love peanut butter.  Snack is an apple with peanut butter, and despite its simplicity, it’s one of the best meals of the day.

Delicious Veggies n' Eggs

Going gluten free is easy when you have all your stuff, but I can see how eating out or trying to grab a vending machine snack would be crazy difficult.  I feel for you guys!  I also don’t think I could be vegan.  I thought my eats were vegan yesterday, but I forgot about the eggs in dinner.  Labeling oneself is particularly limiting!  Props to those of you who stick with it!  Luckily my popcorn is GF!

  3. I’m a tahiniholic and have to try your sauce. I use tahini on sweet potatoes but your sauce would be great (I mean cream sorry). I don’t eat gluten or meat that isn’t organic. I have a lot of “issues” ha.

  4. Apple and pb is the most delicious snack EVER! Just dang beat it 😉 I have an allergy to mushrooms, but I hate them anyway so no loss haha

  5. I’m such a popcorn addict and now I’m craving it bad at eight in the morning. haha.

    The tahini and slaw looks great. Is it similar to cole slaw? I know the flavor wouldn’t be the same, but is it as creamy as regular slaw? All the recipes call for a lot of mayo which I cannot stand. Blech.

    • It’s actually not very slawish at all. I guess it’s just the broccoli slaw and shredded cabbage that are the same. I guess that means you’d like it though! 🙂

  6. Loving that veggie bowl. Yum what great flavors. I don’t eat meat. I haven’t in over 18 years now. I feel very lucky that I don’t seem to have any food allergies.

  7. I like the idea of using apple juice to thin out the tahini in your tahini sauce…I usually just use water, but I bet the apple gives it a nice rounded sweetness. 🙂

  8. I LOVE those teas!! I have both of them and try to drink one of each a day. So tasty!! I am running low though, so I need to fill up my stash STAT!

  10. I don’t have any food allergies, thank goodness! I don’t know what I would do if I did…I have a hard time restricting!

  11. I’m loving the tahini + apple cider vinegar combo. I have both but never though to mix them together!!
    Sounds good =) I eat gf and vegan most of the time but I can’t classify myself as either of the two because I don’t eat that way all the time… I just do what feels right!!

  13. I’ve made a coleslaw with hummus before and I imagine it’s a bit similar to your veggie bowl? Yum!

    For a while I had to stay away from acidic foods, and that was so hard. No fruit, no juice, salad dressings, vinegars, no coffee or black tea or soda, no chocolate, no alcohol, no anything delicious. Bleh. I’m so glad I don’t have to do that all the time.

    I’m a lacto-ovo-pesce-vegetarian, which is a huge mouthful, but it means that I still eat some dairy and fish. I don’t know if I will ever be vegan, although I love vegan food and like to eat a lot of it. I think the decision to be vegetarian or vegan should be totally personal and simple and straightforward: if it looks like food, eat it. If it doesn’t, don’t. Change has to come from within. Giving up meat was super easy for me because it just didn’t resemble food anymore. A lot of vegans say the same thing about eggs and cheese. The hardest thing is imposing complete restrictions on oneself despite enjoyment of a food; if one is struggling it may be better just to cut back rather than to eliminate something entirely. 🙂

  14. When I eat REAL, and good dark chocolate I sneeze..nothing tha would ever hold me back from continuing to eat it, but enough to say it’s a small allergy…I think. Ha.

  15. I have that exact same apple + nut butter snack every day and I put my peanut butter in the exact same tupperware container!! 🙂

I’ve been gluten free for about a month, and at first it was sort of tricky when going out because I would like freak out if there was even the thought that something would touch something where crumbs were. It definitely gets easier though, and I just try to stay towards food places I trust and make sure I always have some gluten free product in my purse or an apple or something.
